So, on a slightly depressing note, I recently broke up with my boyfriend of two years!
Breakups are so complicated, and though I’m happy to move on to the next chapter it’s hard to say goodbye to the relationship I once had and the person I was during that time
Though it’s tough, I am excited for the things to come. I now live in California, focusing on what I enjoy; baking being the first!
While looking into my “perfect breakup recipe” I picked brownies to represent a rich chocolate dessert, AKA the classic comfort food
I also added walnuts to represent the bumpy, textured ride that a breakup brings… and because I love walnuts but feel free to leave these out if they aren’t your cup of tea
Let the record show, these brownies are delicious no matter what your relationship status may be! But they are especially helpful in healing a broken heart <3
The Ingredients
All Purpose Flour: Dependable and reliable, just like your ex couldn’t be
Sugar: A little brown sugar to keep a moist brownie and granulated sugar for structure and sweetness
Cocoa Powder: I use unsweetened 100% cocoa powder, any brand is fine!
Semi-sweet Chocolate: Cut up a chocolate bar to add chocolatey pockets to your brownies, I prefer larger pieces in my batter but this is up to preference
Walnuts: I like larger bits of chopped walnuts, however, the size of your walnuts is completely up to your preference and can be made as small or large as you’d like
Chocolate Walnut Brownie
Equipment
- 1 9×9 Pan Glass or Metal
- 1 Large Bowl
- 1 Whisk
Ingredients
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 10 tbsp butter melted
- 2 eggs room temperature
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 cup flour
- 1/2 cup 100% cocoa powder unsweetened
- 4 oz semi-sweet chocolate chopped
- 1 cup walnuts save 1/4 cup for topping
- 2 tbsp instant espresso powder optional
Instructions
- Preheat oven to 350℉ and line your baking sheet with parchment paper or your preferred non-stick method
- Heat butter until just melted and combine with both sugars. Mix for 2 minutes, until light and fluffy
- Add in eggs one at a time and mix until fully combined
- Add in the remaining dry ingredients; flour, cocoa powder, salt, baking soda, and espresso powder (optional, but elevates the chocolate flavor). Mix until fully combined and any clumps have disappeared
- Chop up the chocolate bar, I prefer larger chunks for larger pockets of chocolate but this is up to personal preference. Chocolate chips will also work for this
- Chop up the walnuts as well if needed depending on size, I used pre-chopped walnuts
- Add in chocolate and 3/4 cup of walnuts to the batter, fold in until combined
- Add batter to the baking pan and top with walnuts
- Pop into the oven for 25-30 minutes. Use a toothpick to check the center of the batter when you think it's done. The toothpick should come out clean or with small crumbs. If it comes out wet leave in the oven a few more minutes to fully bake
- Once done, remove from oven and let rest on the counter for at least 30 minutes before cutting. The longer the better
